C'è un motivo in particolare perché esistono template in bianco e nero o colorati in maniera diversa? Come questo ad esempio!

No nessun motivo, lo fanno solo per evidenziare le varie parti del camion, o almeno credo.
Comunque non cambia niente bianco e nero o colorato.

è molto utile pk ad esempio se si vuole inserire una scritta di colore bianco è più visibile
